Banana and poppy seed cake

I have been umming and arring as to whether to show you this recipe. It is the best banana bread I have ever made. All of my attempts before this one were stodgy and disappointing and took forever to cook – at least double the time the recipe stated, but this one works every time (and I must have made it 30 times!). My deliberation on whether to show it to you stems from my rules about my recipes – ‘they must include food grown in our garden’. This cake does include poppy seeds grown in our garden, so I have allowed it, despite the fact that the bananas did not!

This recipe is a Mary Berry classic. I adapted it from this great food blog. To make it you need 100g margarine, 175g sugar, 2 eggs, 2 ripe bananas, 215g self raising flour, 2 tbsp. milk, 4 tbsp poppy seeds, 1/2 tsp baking powder. Fan oven at 160 C.

Mix everything with an electric whisk and pour into a buttered loaf tin. Cook for 1 hour.
