Blackcurrant gin

You have to make this! It is totally delicious. Blackcurrant gin is brilliant mixed with sparkling water or lemonade, straight on the rocks (if its been one of those days!), or mixed with Prosecco or Champagne for a celebration.

Blackcurrant gin

To make blackcurrant gin you need 2lb blackcurrants, 12oz sugar, 1 pint of gin, 4 tablespoons of water.

Heat your berries with the water until soft, then add the sugar and mash with a potato masher to release the juice. When the sugar has dissolved take off the heat and add the gin. Mush again then pour into a sterilised kilner jar, berries and all.

We kept our mixture in the jar for a month before straining (through a tea strainer) and pouring into sterilised bottles. Try not to drink all at once! It’s lovely with Prosecco…
