Blueberry cake

We have three blueberry bushes growing in big pots filled with ericaceous compost – this compost is acidic which the blueberries need to thrive. They also need moist conditions. We try to water them with rain water, as our tap water is too alkaline which would neutralise the acid.

I saw this cake on the good food website and had to have a go! I love the good food website, everything I have ever made from there has worked beautifully and this cake is no exception. It’s certainly a five star cake, great for birthdays and special events – perfect for my mum’s birthday. The blueberries inside the cake were from our own plants, but the ones on top were from the supermarket – our plants did not produce enough for the whole cake! Apparently they can take three to six years to produce a big crop, so perhaps next year I will be able to make the whole cake from our own blueberries!

This cake is very moist and has amazing frosting – in fact it’s almost worth making for the frosting alone!

How to make blueberry cake

To make this cake you need: 175g soft butter, 175g caster sugar, 3 large eggs (or 4 bantams), 225g self-raising flour, 1 tsp baking powder, 2 tsp vanilla extract. Oven at 160C (fan oven)

For the icing you need: 145ml carton soured cream, 375g blueberries, 200g Philadelphia cheese, 100g icing sugar.

Mix all the cake ingredients together – I used my trusty electric whisk. Then mix in 4 tablespoons of soured cream and half the blueberries. Tip the mixture into a 22cm round tin (I used one with a loose bottom), lined with greaseproof paper and bake for 50 mins until well risen.

How to make blueberry cake


When the cake has cooled whisk the soft cheese, icing sugar and the remains of the soured cream and ice the cake. Then tip the blueberries on top. Yum! Jane

    Well, I baked it. Didn’t have a blueberry bush so I used fresh apricots. Delicious.
