Nigella pancakes with blackcurrant sauce

Nigella is a genius. These pancakes are amazing – delicious and easy to make. You make a big batch of dry pancake mix to keep in a jar in the kitchen. When you fancy pancakes (which, for me, is always!) you take a scoop of this mix, add an egg and some milk and go!

I got the pancake recipe here. For the dry mix you need 600g plain flour, 3 tablespoons baking powder, 2 teaspoons bicarbonate of soda, 1 teaspoon salt, 40g caster sugar. Mix all the dry ingredients in a big bowl and store in a large jar. This dry mix will make 4 batches of pancakes.

For one batch of pancakes take 150g of the dry mixture and whisk it with 1 egg, 1 tablespoon of melted butter and 250ml milk. Heat a non-stick pan, then pour in pancake sized amounts, you don’t need to add butter or oil to the pan. When they start to bubble like this flip them over. I make four pancakes at a time and store them in the oven until ready to eat.

To make the blackcurrant sauce, take a cup full of blackcurrants and heat them in a pan with 5 tablespoons of water and 5 tablespoons of sugar.


When the blackcurrants  soften push them through a sieve to remove the bits. Check they are sweet enough, then serve them with the pancakes.
