Rhubarb and Almond Cake

I have made this cake in the past with lots of different fruits in the middle and it has always been a success. It’s easy to make and tastes delicious, in short the perfect cake recipe. I’ve discovered that it’s particularly good with rhubarb. This is how I make it:

To make this cake you will need 140g of ground almonds, 140g of margarine or softened butter (I use flora light), 160g caster sugar, 140g self raising flour, 2 eggs (or 3 bantams eggs!), 1tsp vanilla extract, 200g chopped rhubarb, icing sugar to serve. 

First sprinkle your rhubarb with 20g of sugar and leave it to sit while you make the cake mix. (If you use a sweeter fruit like raspberries leave this step out)

Put all the other ingredients into a mixing bowl and mix into a paste. I use an electric whisk as it’s very quick.

Put all of the ingredients into the bowl (except the rhubarb) and mix

Line a 20cm size cake tin with greaseproof parchment and pour half of the mixture into it. Sprinkle the rhubarb pieces on top of the batter, then add the other half to cover it. Smooth the top and put into a preheated oven at 180 C for 40-50 minutes.

When the cake is golden, take it out and cool on a rack. Sprinkle with icing sugar and enjoy! Jane

    I have sampled this cake and it is scrumptious , I am going to try making it with gooseberries next time, hopefully picked from Damson Cottage garden !

      Let me know how it goes! I don’t think I have ever made this cake and had it for more than 12 hours, it always gets eaten so quickly! Jane
