Rosemary chips

As promised, here is our fab chips recipe. These chips are addictive. I love the crispy, salty rosemary…. mmmmm chips! They are perfect with baked eggs.

You need 2 medium sized potatoes per person (when you prepare them you will think ‘this will be too many’, but go with it – they shrink when cooked!), 1 tablespoon of olive oil per person, a small handful of rosemary per person, salt. Oven at 200 C.

Wash your spuds and stab them with a skewer or sharp knife. Put them all together in the microwave on high for 8 minutes, they should be part cooked.

Making rosemary chips

While your potatoes are cooking put the oil and rosemary in a pestle and mortar with a pinch of salt (per person) and bash the herbs into the oil. You don’t want to turn them to paste so dont be too vigorous! You just want to make the oil rosemary flavoured and the rosemary oily!

When the potatoes have done their time in the microwave, cut them into wedges, then brush them with your rosemary oil.

Sprinkle another pinch of salt over the wedges and put them in the oven for 15 minutes. They should be just turning golden when you take them out. Give them a stir and sprinkle over the rosemary – be generous with it. The more the merrier.

Add the rosemary to the chips

Put them back in the oven for another 15 minutes until the potatoes are golden brown and the rosemary is crisp. Eat straight away.
